These fruits first cultivated in China resemble other lemon varieties in appearance: they have smooth, golden yellow peel and are round to oval in shape.
Beneath their delicate, supremely aromatic (and edible!) skin is a layer of white pith that is so thin that Meyer lemons may be eaten in their entirety! Not only do Meyer lemons stand out in that they are completely edible: their tender, yellow flesh wows eaters with its distinctive sweet flavour! Unlike other lemons, this often seedless variety possesses little acidity, so the flesh has a sugary taste perfect for those with a sweet tooth!
The bright, floral flavour of Meyer lemons means they are ideal for use in any number of sweet and savoury dishes - Meyer lemons can be used anywhere you want to add pure lemon flavour with none of the characteristic lemon bitterness! We'd recommend cutting thin slices of lemon, removing the seeds, and roasting the slices with root vegetables or seafood. In sweet foods such as marmalade or lemonade, the lower acid level of Meyer lemons means less sugar may be required!
